Forget face masks and manicures. For me, the two most important elements of self-care are food and sleep. Surprisingly, I have trouble doing both in a way that is nurturing and helping me be my best. I know I need at least 8 hours of sleep, but I often futz around at night and go to bed way too late. For food, I often find myself starving and without any good food options around me. So, I want to work on doing a better job of caring for myself with food and I’ve decided to start a series on this blog with my weekly meal plan. I’m keeping it as simple and realistic as possible by planning out lunch and dinner Monday through Friday with some good breakfasts and snacks for good measure.  My hope is that developing and implementing a plan for my food focused on high protein meals and snacks will help me better manage my Polycystic Ovarian Syndrome.

Here’s my meal plan for this week:

Breakfasts:

  • I do best when I start my day with two eggs, so I’m boiling up enough hard boiled eggs to get me through the week. I keep some sea salt at my desk at work and try my best to crack them when no one is around because no one likes a stinky boiled egg!
  • I made these No Bake Energy Bites from How Sweet Eats. This is a TRIED and TRUE recipe for me. I skip the step of rolling them in crushed nuts at the end because who has the time? They are so good, perfect for a snack around 10a or as a quick breakfast when running out the door.

Snacks:

  • Cheese sticks
  • Dried chickpeas
  • Hummus + crackers
  • Nuts

Monday:

  • Lunch: Out with work colleague
  • Dinner: Going to the Warrior’s game with Keith. Our first time at the Chase Center.

Tuesday:

Wednesday:

  • Lunch: Shutterbean’s leftover glazed chicken.
  • Dinner: Another Warrior’s game. I think I am the luckiest girl in the world this week.

Thursday:

  • Brunch: Going to make a little brunch for my little family before we drive to my sister’s for Thanksgiving.
  • Dinner: I mean, the biggest feast of the year! Thanksgiving!!

Friday:

  • Lunch: Leftovers.
  • Dinner: Duh, more leftovers.
