Friends, it’s Sunday and I feel on top of the world even though I have a cold. I made meatball subs for our Sunday dinner and they were delicious. I also boiled some eggs for breakfasts, prepped my lunch for tomorrow and made some energy bites for snacks this week. I love starting my weeks out with a plan and some advanced preparation. This week is going to be intense, so it feels good to have my own back heading into the crazy.
Breakfasts/Snacks:
- Boiled eggs
- Energy Bites (have you made these yet? They are SO good!)
- Yogurt
- Avocado Toast
- Turkey Cheese roll-ups
- Nuts
- Jerky
Monday:
- Lunch: Tuna Salad + Yogurt
- Dinner: 5 Ingredient Shrimp with Feta + Pasta
Tuesday:
- Lunch: Out
- Dinner: Keith’s Chicken Stew
Wednesday:
- Lunch: Lunch Out for Work
- Dinner: Roasted Brocolli and White Beans + Green Salad
Thursday:
- Lunch: Leftover Chicken Stew
- Dinner: Chicken Fajitas
Friday:
- Lunch: Leftover Fajitas
- Dinner: Rice & Beans Casserole + Guac
