Meal Plan, Week 50

Can I tell you just how life changing it is for me to have a realistic meal plan guiding me throughout the week? I love having delicious food ready and waiting. Plus, my meal planning accountability here is helping me feel inspired to mix it up every week with some new recipes. 10/10 recommend!

Last week was awesome. The highlight of the week was Keith’s Turkey Burgers. I need to try to convince him to share the recipe here. They are basically mini turkey meatloafs covered with American cheese and they went perfectly with the brocollini I bought to go with them. Yum! I also came to a final realization this week that I just don’t like store bough hummus. I was having to force myself to eat it for my snacks so it didn’t go to waste. It’s homemade or restaurant hummus only for me from here on out, friends. We also didn’t make the spaghetti because we got invited to a big wine tasting with a friend, so we just noshed on appetizers + wine for dinner that night and will make the spaghetti this week.

Here’s this week’s plan:

Breakfast:

  • Boiled eggs
  • Scrambled egg +cheese breakfast burritos
  • Yogurt + diced apples + granola

Snacks:

  • Cheese sticks (leftover from last week)
  • Salami
  • Cottage Cheese
  • Cashews

Monday:

  • Lunch: TBD. It’s my first week at the new job, so I’m going to plan to run out for food or go out with colleagues. I can’t take the pressure of having to pack
  • Dinner: Keith’s spaghetti

Tuesday:

  • Lunch: TBD
  • Dinner: Out for my birthday! I’m thinking Thai

Wednesday:

  • Lunch: TBD
  • Dinner: Turkey Club Sandwiches + soup

Thursday:

  • Brunch: TBD
  • Dinner: Mac ‘n Cheese + salad

Friday:

  • Lunch: TBD
  • Dinner: Pizza + Caesar salad

Meal Plan, Week 49 2019

Last week was my first foray into meal planning accountability in this space. It made such a difference for me! I loved having the How Sweet Eats snack bites prepped ahead. I wrapped them individually in aluminum foil and had them in a bowl in the fridge ready to pop in my purse on the way out the door. My apricot chicken from Shutterbean was so, so, so good and the leftovers were even better. All in all, it was a great week of meal planning and I’m excited to continue the momentum.

Here’s this week’s plan:

Breakfast:

  • I’m going to make up a breakfast frittata, loaded with onions, feta, kale, mushrooms and perhaps some turkey sausage. I like my boiled eggs, but I think I’ll shake it up this week with something a bit different.

Snacks:

  • Cheese sticks (leftover from last week)
  • Hummus + crackers (leftover from last week)
  • Salami
  • Mandarin Oranges
  • Dried Chickpeas

Monday:

  • Lunch: Provided by work
  • Dinner: Work happy hour, so I will probably not be hungry after eating lots of apps 🙂

Tuesday:

  • Lunch: Work Lunch
  • Dinner: Taco Tuesday. Simple ground turkey + black beans + cheese + tortillas + sour cream + salsa. Maybe a little kale sauteed to go on top for health. 🙂

Wednesday:

  • Lunch: Taco leftovers
  • Dinner: Keith’s making spaghetti 🙂

Thursday:

  • Brunch: Spaghetti leftovers
  • Dinner: grilled cheese + tomato soup

Friday:

  • Lunch: Work Lunch
  • Dinner: Keith’s homemade Turkey Burgers + kale salad

It’s going to be an intense week because it’s my last week at my current job. Keith graciously stepped up to make most of the dinners this week so that I can concentrate my energy on work and getting my blog posts up. Thanks Keith!
