Weekly Meal Plan, Week 4, 2020

Welcome to the Weekly Meal Plan! I’m looking forward to this week because it’s a regular degular week for me. No work travel like last week or like next week. It’s a luxurious few days to get into a groove before things get crazy again. I’m going to maximize the time by planning some pretty epic meals this week.

Before we dive in, can I just say that the Beef and Ginger Stir Fry from last week’s plan was amazing? I loved it so much and will definitely be making it again. Stirring in the butter and lemon (I used lime) at the end took it over the top for me, but my best friend Sarah also made it last week and she said it was just okay. Beware that it’s a bit of a mixed bag for some!

Okay, here’s this week’s plan….

Breakfasts:

  • I’ve been enjoying fresh fruit mixed with yogurt, granola and slivered almonds lately, so I’m planning to pick up a few small glass jars to prep the yogurt and fruit ahead of time so I can just grab and go in the morning and add granola once I get to work.
  • I’m in a bit of an oatmeal mood lately, so I’m going to do the same thing with oatmeal. Quick oats + brown sugar prepped in a jar. Add chia seeds, nut butter, and walnuts when I get to work.

Snacks:

  • Beef jerky
  • Mandarin oranges
  • Cashews
  • Cheese + crackers

Lunch and Dinner:

Monday:

  • Lunch: Leftover soup. (I got jammed up last week with meal planning, so I’m going to make the Tomato and Cannellini Bean soup for dinner on Sunday night.)
  • Dinner: Sauteed Kale + Eggs

Tuesday:

Wednesday:

  • Lunch: Work Lunch
  • Dinner: Shells and Cheese + Caesar Salad. Salivating just thinking of this dinner, guys!

Thursday:

  • Lunch: Leftover shells
  • Dinner: Tuna Melts + Sun Chips (why are those the best chips ever?!)

Friday (Work from Home):

  • Lunch: PB&J or quesadilla
  • Dinner: Homemade Chicken Wings + Carrots and Celery. (Keith LOVES chicken wings, so we are going to attempt to make them at home for the first time ever!)

MEAL PLAN, WEEK 2 2020

I don’t know why it took me 34 years on this planet to fully understand that really, truly kick-ass dinners lead to work lunches that you actually want to eat. But, that’s the insight friends. I realized it on January 2nd in the 2020 year of our Lord when I looked forward to eating leftover Black-eyed Peas and Grandma’s Mexican Cornbread all morning at work. When I heated them up, they tasted even better than I imagined they would and I had my lightbulb moment. For this week and all weeks here on out, I am focusing on making the most delicious freaking dinners you could ever imagine so that I feel more motivated than ever to eat lunch in at work. I ate at my peas at my desk and then headed outside and walked for two miles among the vineyards at work and I don’t know if I can ever remember I time in my life where I just felt so genuinely happy and alive at 12p at work.

I guess that’s what good dinners will do you for you.

That said, here’s this week’s epic dinner meal plan even though this week is unusually heavy with scheduled work lunches. It’s still good for me to get in the habit of cooking amazing dinners.

Breakfasts:

  • Boiled eggs and cheese sticks
  • I’m also going to look at Costco and see if I can find any other compelling grab-and-go morning breakfast ideas.

Snacks:

  • Yogurt
  • Cheese sticks
  • Nuts
  • Jerky

Lunch & Dinner:

Monday:

  • Lunch: Scheduled work lunch
  • Dinner: Costco Asian Salad with Grilled Chicken

Tuesday:

  • Lunch: Scheduled work lunch
  • Dinner: Trader Joe’s Soba Noodles Stir Fry

Wednesday:

  • Lunch: Scheduled work lunch
  • Dinner: Garage Noodles + Mary’s Cucumber Salad

Thursday:

Friday (Work from Home):

  • Lunch: Chicken Soft Tacos
  • Dinner: Leftovers or Take-out
