Damn Delicious: Super Duper Easy Egg Bake

Forgive the bad photo, but I HAD to share this recipe for a Super Duper Easy Egg bake for two reasons. One: it’s the perfect recipe for Christmas morning. Mix it up super quick and pop it in the oven right before you start opening presents and it will be ready when you’re done. Two: I totally perfected the recipe this weekend with the ideal egg to potato to cheese recipe and I want to write it down so I never forget.

My friend Shannon introduced me to the recipe years ago and I’ve adopted her technique ever since. It’s a total crowd pleaser, but it almost makes you feel silly when everyone’s fawning over it at brunch because you spent like five minutes throwing it together.

Super Duper Easy Egg Bake

Ingredients:

  • 2 bags of frozen shredded hash browns. Left in fridge over night to thaw.
  • salt, pepper, garlic powder, seasoned salt, olive oil
  • 18 eggs
  • 1/2 cup milk
  • 3 cups of shredded cheddar or mexican blend cheese. I do the pre-shredded stuff. It is a ‘super duper easy egg bake’ after all.

Directions:

  1. Preheat oven to 375 degrees.
  2. Empty hash browns in 9×13 pan, season to your liking with salt, pepper, garlic powder, seasoned salt and olive oil. Don’t overthink it – a generous sprinkle of each will be great. Put the hash browns with seasoning into the oven while you mix up the rest of the dish.
  3. Crack eggs into bowl. Add about a teaspoon of salt and milk. Use fork to scramble. Add about two cups of the cheese to egg mixture.
  4. Take hashbrowns out of the oven and stir them up. Add the egg mixture. Put in the oven for about 25 minutes. Once the eggs start to set in the middle, add remaining cup of cheese on top and allow it to melt and get all bubbly, about five minutes more. YUM.

You can also add any breakfast meat of your liking to the mix, just make sure you cook it first.

Meal Plan, Week 51

I can’t believe this week officially kicks off the Christmas holidays. How is it possible? I still haven’t bought any Christmas presents! Not one. We have a short week this week as Keith and I are off to Arizona to celebrate Christmas and my niece’s college graduation, but I’m still meal planning out Monday – Wednesday. I’m in dire need of some nutrients amidst all of the eating out and holiday parties lately, so I got on my Safeway app and ordered some groceries to pick up on my way home from work. I feel like I’m fighting off a cold, so I’m going to increase the nutrition in my food and try to get lots of rest before we head off later this week.

Here’s this week’s plan:

Breakfast:

  • Leftover breakfast bake from brunch this weekend
  • Trusty boiled eggs 🙂

Snacks:

  • Cheese sticks & Salami (really digging this snack lately as I find it really satiating)
  • Crackers
  • Apples

Monday:

  • Lunch: I drove through Wendy’s this afternoon on the drive back to the office from my offsite training
  • Dinner: Keith’s fried chicken + rice + wedge salads

Tuesday:

Wednesday:

  • Lunch: Dinner leftovers
  •  Dinner: Red Beans & Rice with sausage

not without salt recipe

The images of this Chocolate Peanut Butter Bouche de Noel with Salted Peanut Caramel from Not Without Salt stopped me in my tracks this morning. Isn’t it gorgeous? I admit, I will probably never make such an involved recipe, but I’d love to eat it!

My friend got a puppy this week. I DIED when I saw this picture of his ears. How cute is he???

On my commute this week, I rocked out to some old school Kanye. Perhaps my favorite Kanye songs ever is Get ‘Em High, especially because of the Common and Talib features. I was seriously blasting this barreling down the freeway and it made me deliriously happy.

Did you read the Beyoncé article in Elle? I just love that woman and can’t wait to buy some Ivy Park. I agree with her that your creativity is your power. I can’t believe how much my life has improved since I’ve been creative again with this blog.
