My Cooking and Baking Dream List…

The shelves may still be ransacked and it may be impossible to meal plan right now, but that isn’t keeping me from dreaming up all kinds of food I want to try my hand at while I have so much extra time on my hands.

People are calling it ‘procrastibaking’, but I’m calling it all of my food dreams coming true. I finally feel like I have the energy to pursue my love for cooking and expand my skills. I am keeping a running list of ingredients I’ll need. I comb the shelves when I go to the grocery store once a week or so for anything I can gather. Yeast and flour is hard to come by these days, but if that’s my main ‘problem’ right now, I feel super grateful.

Here’s my current cooking and baking bucket list:

  • Challah Bread
  • Barbacoa Meat
  • Homemade Tortillas
  • Chicken Gumbo
  • Biscuits (both drop and rolled)
  • Cheesecake Brownies
  • Homemade Pasta
  • Chocolate Banana Bread
  • Cacio e Pepe
  • Broccoli Cheddar Soup
  • Oven Roasted Chicken
  • London Broil
  • French Silk Pie
  • Dutch Baby Pancake

That’s all I can think of for now and I think that’s plenty enough to get started. I already made the barbacoa and tortillas for dinner last night and it was the meal of my dreams. I’ll write tomorrow to let you know more about it…until then, please let me know: are you procrastibaking, too? What are you making? Do you have anything else you think I should add? After I perfected French Onion Soup a few weeks ago, I feel like the sky is my culinary limit!

A Change in Direction for MeeshyD…

Gosh, I love this little ol’ blog of mine. I love being creative and finding my writing voice. Lately, I’ve been feeling the pull to have a bit more ‘direction’ to my writing in this space, but I wasn’t sure if I was ready to commit to sharing my goals so publicly here.

Well, after this pandemic, I just feel a big ol’ case of the ‘eff its’. Who has time to waste hemming and hawing over a decision related to their online blog when the world as we know it can change in an instant? The time is now. Seize the day! So, I’m ready to follow the call of my heart and get a little more specific around these parts and put myself out there a bit more.

Here goes…

I want to change the way I live my life. I’m realizing that I’ve spent my time chasing down big goals and climbing ladders and participating in the rat race and I just feel like I want to explore a whole new path. I want to simplify. Less expensive dinners out and fancy vacations, more cooking at home and buying second-hand. I’d love to know what it’s like to be free of consumer debt. I’d like to explore a life where every week doesn’t stretch out into an endless stream of obligations and events and where there is more time to just be.

What would that feel like?

I’m getting a taste of it right now as I am so lucky to be working from home during this pandemic. I wake up after sleeping enough and I connect with my loved ones and then I do great work and then I cook a delicious dinner. Maybe go for a walk. That’s it, but that’s everything. I feel like my soul is resting for the first time in a long time and I want to find more of that.

So, I’m going to play with shifting the focus of this space here by documenting the ways I’m changing my life. I’m going to track the things I’m doing to simplify and to pay down debt. I’m going to share the things I’m cooking and the exploration I’m doing around more sustainable fashion and home design. Come to think of it, it’s the same stuff I’ve been sharing already, but through a new lense.

Weekly Meal Plan, Week 12 2020

A lot can change in the span of a week, huh? Last week, I was trying to recover from a cold and facing a busy week of meetings at the office. This week, I’m staring down a couple of weeks working from home in my little dining nook. It requires a different preparation, both mental and physical. We were able to get all of the supplies we need for our meals this week and I definitely don’t take it for granted. Aside from an actual toilet paper shortage where we’re getting closer and closer to our last roll while the preppers gobble up enough T.P. to get them through the end of days, we’re all good over here.

Here’s what we’re cooking this week:

Breakfasts and Lunches (all at home):

  • Scrambled eggs and sausages
  • Egg sammies
  • Turkey sammies
  • Oatmeal
  • Pancakes
  • Salads

Dinners:

  • Sunday: Keith’s Fried Chicken + Rice
  • Monday: Homemade French Onion Soup
  • Tuesday: Steaks + Roasted Brocollini + Baked Potatoes
  • Wednesday: Chicken Fajitas
  • Thursday: Trader Joe’s Ravioli with Red Sauce
  • Friday: Takeout

Let’s all treat each other with a lot of tenderness this week, okay? I love you all so very much.
