Welp, last week’s meal plan went out the window almost as soon as it was conceived. I structured the plan around a mid-week shopping trip that I had planned after my dance class on Tuesday night. When I decided not to go to dance, our whole plan fell apart from Wednesday onward. I realized that I just need to handle the shopping on Sunday if I want to have a prayer of following through with the plan and that’s totally okay with me. Know thyself!
I’m traveling for work early this week and I was tempted to wing it when I got back on Wednesday, but I’m giving Wednesday self the gift of preparation and planning ahead for the week. Here’s what I have on deck for this week:
Breakfasts:
- Egg sammies or boiled eggs
Snacks:
- Clementines
- Cheese sticks
- Nuts
- Jerky
Lunch & Dinner:
Monday:
- Lunch: Working from home before my flight. Leftovers from Sunday dinner.
- Dinner: Flying to Arkansas for work. Get to the airport early enough to get a good dinner in before I board the flight.
Tuesday:
- Lunch: Work Travel
- Dinner: Work Travel
Wednesday:
- Lunch: Will just be getting back from a super early flight. Going to play this meal by ear.
- Dinner: Keith’s Turkey Burgers + beans + asparagus
Thursday:
- Lunch: Leftover Turkey Burgers
- Dinner: Tomato and Cannellini Bean Soup
Friday (Work from Home):
- Lunch: Leftover soup + Tuna Melts
- Dinner: Beef and Ginger Stir Fry

I spend way longer than I’d like to figuring out the meal plan for the week because I just don’t have a go-to resource online that fits me perfectly.
