The Internet is Magic, Volume X

The internet has been making me cry happy tears lately. Here are a few links I’d love to share because the internet truly is magic…

Humans of New York is better than ever lately. I loved this post and this one, too.

The most beautiful thing on the internet for me lately is my wonderful Hipline community and choreographers. Taking zoom classes with my ladies is getting me through the toughest of days. Take a class with me? I dance on Tuesdays at 7:45 and Saturdays at 12:45 without fail, plus other classes on a whim.

Another lovely internet perk is my friend Karah is now offering online consultations for her esthetics business, Idell Beauty. I want to get started on an anti-aging regimen and she was so patient and lovely in our initial consult in explaining to most basic of skincare to me. I must have tragic optimism (New York Times) because I think this coronavirus is going to make us better and stronger as people even amidst such deep suffering. It already is. “But even in the darkest of places, they see glimmers of light, and this ultimately sustains them.” AMEN.

Damn Delicious: Drop Biscuits from Heaven

What if I told you that you could have these delicious pillows of fluff from idea to fruition within thirty minutes? That you wouldn’t have to touch a rolling pin or try to find a biscuit cutter? That you wouldn’t have to futz with flour on your counters?

These slightly adapted Drop Biscuits from Shutterbean are just pure magic and they come together so fast with the most humble list of ingredients. I highly, highly recommend.

Ingredients:

  • 2 cups flour
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1 stick (1/2 cup) butter, cut into tiny pieces
  • 3/4 – 1 cup milk

Directions:

  1. Preheat oven to 450.
  2. Whisk together the flour, baking powder and salt until well-combined.
  3. Cut in the butter. I use my (very clean!) hands to do this. Basically, I make sure the butter gets coated in flour as soon as I break it up. You want it to flake into tiny pieces, so I mush the butter up and then I toss it in the flour, mush it up, toss it in the flour, you get the picture. Try to handle the flour as very little as possible so that your biscuits stay flaky.
  4. Once the butter is pretty well mixed with the flour, add the milk. You want to use just enough milk to make your dough wet, but not mushy. It’s a fine line. Start with 3/4 of a cup and add a little bit more if you need it. In all, I used a full cup of 1% milk. You might need a little less if you use milk with a higher fat percentage.
  5. Bake for about 12-15 minutes until they turn a delightful golden brown.

I fried a couple of eggs in butter to go with mine and had one of my biscuits with blackberry jam. All was well in my world.

Weekly Meal Plan, Week 16 2020 – Still Sheltering in Place

Whew.

That’s all I have to say about staying home for weeks on end.

My motivation to cook waxes and wanes. I’m still experimenting, but my initial enthusiasm has faded. I have been saying I’m going to make kale soup for three days now. I’m just doing the best I can and some days my best also feels like my worst.

At any rate, we have some funs meals on the docket and I wanted to share them with you here. Perhaps you’ll find some motivation or inspiration from this list.

Here’s what I’m planning to make:

  • Going to try to make the famous Roberto Kale soup. It’s really going to happen tonight!
  • The salad above was dinner last night and man was it good. It’s a bagged salad mix of brussels and kale and radicchio with this ‘Better than Bottled‘ balsamic homemade dressing I’ve been making for years. Keith BBQ’d some chicken for our protein and then I added diced apples, candied walnuts, raw pistachios, avocado and some parmesan. It was absolute perfection.
  • Broccoli Cheddar soup with fresh baked bread. My mom sent me a bread recipe that I’m trying to get the hang of.
  • Dropped Biscuits + Fried eggs for weekend breakfast
  • Taco Salad
  • Green juices. I love them so much.
  • Crispy Chicken Tacos
  • Another Roasted Chicken, this time with cabbage in it a la Smitten Kitchen. I just need to find the cabbage somewhere!
  • I was going to make French Silk Pie, but then I decided to make Pecan Delite instead because it reminds me of my childhood and honestly tastes much better than french silk pie in my humble opinion. I made it last night and oh wow. No regrets! Going to share the recipe with you soon.
  • Going to attempt my first Dutch Baby. Wish me luck!
